If the name "Au Za'atar" sounds vaguely familiar, it's because you've likely seen their highly Instagrammable food all over your feeds. In particular, they're known for their tableside shawarma, a dish we were able to get a behind-the-scenes look at recently.

Chef and owner Tarik Fallous begins by seasoning about 25 pounds of whichever meat he's about to skewer (you can get the famous dish in chicken, lamb, or beef) with a combination of spices he's been perfecting for years. Once that's all said and done, you end up with north of 50 slices of meat headed to your table.

It's all roasted and then placed in an unusual machine that heats and spins simultaneously so that what you get at the front of the restaurant is a gorgeously browned, perfectly evenly cooked tower of meat...that you're free to destroy and consume as you please.

This is all before, of course the entire basket of fries, plenty of pita, and accompanying Lebanese condiments that come with it. Have a ball, my friends—I certainly did.
